Dhea's Spinach chips with flour batter and sauteed spinach


I will never forget the day I walked out into my yard and saw Dhea picking  the "weeds" next to my house! Dhea explained that the "weeds" I had been stepping over in my yard was actually "Wild Spinach". She showed skeptical me photos from Indonesia and yes it is in fact spinach!  I had an accidental garden and didn't even know it!

She has her spinach chips recipe below and it is awesome to snack on!

This is spinach that grows wild but tastes so delicious.
I have so much wild spinach growing throughout my back yard and I will pick it up every 3 days because they will regrow fast. This two recipes for spinach.
Spinach chips with flour batter and sauteed spinach.

Sauteed Spinach :

1. 1/2 Onion
2. 3 cloves of garlic.
3. Hot pepper ( Whichever you choose habanero,jalapeno or Serrano pepper )
3. Salt. ( as desire )
4. Pinch of sugar.
3. 3 tbsp cooking oil.
5. 1/2 cup of water.

Instruction :

1. Chop onion and garlic in small pieces.
2. Cut the spinach about 2 inches.
3. Heat the oil and saute the garlic and onion until golden brown, then add hot pepper.
4. Add the spinach and the water and cook it until soft enough but don't over cook.
5. Add salt as your desire and dash it with pinch of sugar.
6. Ready to serve with white rice.


Spinach Chips :

Batter :

1. 2 cups of flour.
2. garlic powder.
3. Onion powder.
4. Salt. ( as you desire )
5. black pepper.
3. Water.
4. Cooking oil for deep fry.

Instruction.
Mix all the ingredients  when you mix it add water little by little until the batter enough to dip the spinach and fry it until golden brown. It doesn't take long and it is so good!

Dhea's Mie Kopyok

O.K. - so I know that I have said this before but Dhea is an amazing cook. When she cooks you can see that she actually enjoys it and the care that she puts into the entire process is a wonderful thing. The recipe below is a dish she made a while back  and just like her it is simply delightful- -- so here it is ... enjoy!


Dhea's Mie Kopyok

Broth/vegetables stock Recipes.

4 garlic cloves fine chopped.
1/2 onion chops fine chopped.
2 carrots cut in cubes.
Mushrooms cut tin slices.
1 Celery sticks chops fines.
Salt ( just enough )
Black pepper to your taste.
pinch of sugar.
3 tbs of butter.

Bakwan or tofu fry

Boil fine spaghetti noodles softer than you usually use for eating italian recipes.

Add soya sauce, ketchup or hot sauces as desired.

Instruction :
Saute garlic and onion until golden brown then set aside
Boil 3.5 quart of water in a  pan.
when the water begins to boil add sauted garlic and onion then add the rest of the vegetables.
Then add salt and black pepper as desired.
Add a pinch of sugar to balance the taste
also add 3 tbs of butter.

Dhea's 3.5 minute cup cakes



So the kids and I were at Dhea's , when she mentioned these the first time. There was no way they could be this fast and yet still taste yummy, right? Man was I wrong - these are the perfect sweet-tooth fix and all there before the craving goes away-no suffering....watching the clock...looking in the stove every five minutes...waiting for the buzzer to go off.... nope, in five minute I was already working on my second one :)


Here how to do them:)


Recipe 3.5 minutes Cup cakes

6 tbs sugar
5 tbs flour
1 eggs
3 tbs cooking oil
3 tbs milk
1 pinch of baking soda
4 tbs Hershey Chocolate syrup.

Mix all of the ingredients in the cup, stir it until smooth
 then just put in microwave for 3.5 minutes.
Ready to serve you can add whatever you want. 
I sprinkle powdered sugar on top of it then add
chocolate syrup too.
Yummy.


Serves 2 people.

Dhea's Potato Camarones

This is really good !



It has alot of fresh vegetables _ which is always a big plus!
If you have kids , you can always get them involved in the veggie-preparation process (never with a sharp object though!) this can be fun for them and a big help to you!


Anyway, here is the recipe- enjoy

Ingredients for sauces :
1. 1/2 onion cut thin slice.
2. 4 cloves of garlic chops.
3. Oregano 1/2 tsp.
4. 1 tsp grated parmesan cheese.
5. 3 tbsp margarine/butter.
6. 3 tbsp grated cheddar cheese.
7. 1 tsp vinegar.
8. salt.
9. Black pepper.
10. 1 cup of hunts spaghetti sauces.
11. Pinch of sugar.
12. 3 tbsp cooking oil.
13. crushed pepper.
14. 1 cup of water.


Instructions :

1. Heat cooking oil than sauté onion and garlic until golden brown.


2. Pour Spaghetti sauce mix with vinegar, water also add salt and pinch of sugar, black

pepper just enough to taste.


3. add the rest of ingredients; a pinch of crushed pepper, oregano and at the end add

butter, grated parmesan and cheddar cheese.

Vegetables;

1. Potatoes cut dice than deep fry till golden brown put a side.
2. dice carrots.
3. mushrooms .
4. celery sticks.

When the sauces ready put the carrots , celery sticks and mushroom until start to cooked than mix with cooked potatoes.

served with warm white rice. Yummy

Dhea's Tofu Balls

Yesterday,at Dhea's, was alot of fun . First -she has the best assistant ever !

The Tofu Balls Dhea made were awesome - You can add them to foods if you want or eat them alone.
They were so good that they never stood a chance with me in the kitchen:)  The kids and I just kept eating them!- and then they were all gone-I don't know why she keeps inviting us over!




Here is the recipe:Dhea's Tofu Balls
(What you'll need)

1 package firm tofu
adobo complete seasoning
black pepper
3 tbs flour
1 tbs butter
grated parmesan cheese.
1 egg

Instructions :

1. Mash the tofu and mix it with adobo complete seasoning
 ( enough ) pinch of black pepper,add 3 tbs of flour,add
  also 1 tbs of butter.
  after this, add egg and parmesan cheese to the mixture and mix it.
2. Make small ball to make it easy for you because of
   the texture. You can use oil or water at your hand palm
   so the dough doesn't stick at your hand.
3. Deep fry until golden brown.

Dhea's Apple Pie

So with the place I have now I inherited an Apple tree- don't know much about apple trees but I water it everyday . It survived and now I have all these cool apples .

Last week asked Dhea if she could look in on it with me to see how they are coming along- "fine" she said, "want me to make and apple pie." She is the coolest neighbor ever!

Here is her recipe- it is so good:)

2 1/2 cups all-purpose flour, plus extra for rolling 1 cup (2 sticks or 8 ounces)
 unsalted butter, very-cold, cut into 1/2 inch cubes
1 teaspoon salt 1 teaspoon sugar 6 to 8 Tbsp ice water

1 Combine flour, salt, and sugar in a food processor;
pulse to mix. Add butter and pulse 6 to 8 times,
 or you could used fork ( me ) until mixture resembles coarse meal,
 with pea size pieces of butter. Add ice water 1 Tbsp at a time,
 pulsing until mixture just begins to clump together. If you pinch
some of the crumbly dough and it holds together, it's ready.
If the dough doesn't hold together, add a little more water and pulse again.


2 Remove dough from machine and place in a mound on a clean surface.
 Gently shape into 2 discs. Knead the dough just enough to form the discs,
do not over-knead. You should be able to see little bits of butter in the
dough. These small chunks of butter are what will allow the resulting crust
 to be flaky. Sprinkle a little flour around the discs. Wrap each disc in
plastic wrap and refrigerate at least 1 hour, and up to 2 days.


3 Remove one crust disk from the refrigerator. Let sit at room temperature for
 5-10 minutes in order to soften just enough to make rolling out a bit easier.
Roll out with a rolling pin on a lightly floured surface to a 12-inch circle;
about 1/8 of an inch thick. As you roll out the dough, check if the dough is
sticking to the surface below. If necessary, add a few sprinkles of flour under
the dough to keep the dough from sticking. Carefully place onto a 9-inch pie plate.
 Gently press the pie dough down so that it lines the bottom and sides of the pie plate.
Use a pair of kitchen scissors to trim the dough to within 1/2 inch of the edge of the pie dish.


4 Add filling to the pie.


5 Roll out second disk of dough, as before.
Gently place onto the top of the filling in the pie.
Pinch top and bottom of dough rounds firmly together.
Trim excess dough with kitchen shears, leaving a 3/4 inch overhang.
Fold the edge of the top piece of dough over and under the edge of
the bottom piece of dough, pressing together. Flute edges using thumb
and forefinger or press with a fork. Score the top of the pie with four
2-inch long cuts, so that steam from the cooking pie can escape.


(The Apple filling)

3/4 cup light brown sugar 1/4 cup all-purpose flour 3/4 teaspoon ground
cinnamon, plus more for sprinkling Freshly ground nutmeg, to taste 7 medium
apples, peeled, cored and thinly sliced 1 lemon, zested and juice  Butter 2 tbs


Mix together The brown sugar, flour, cinnamon, and nutmeg in a small bowl.
In another bowl, sprinkle apples with the juice of 1 lemon and toss. Stir
in the sugar mixture to evenly coat the apples

Dhea's Vegetable Soup:)

When Dhea made this , my kids couldn't get enough - and that's saying alot since they are so picky.
Make some today for the people you love--even the picky ones:)

Vegetables & tofu soups

Ingredients :
Garlic  3 cloves
Onion 1/2
black pepper ( pinch )
salt ( enough )
pinch of sugar
sweet basil
2 tablespoons of vegetables spread.

potatoes ( 6 )
celery ( 2 sticks )
carrots ( 2 )
corn kernels ( 2 corns )
mushrooms
spinach
tofu ( 1 box of firm tofu )

This is for 5 qrt pot of soup for about for 10 people.
